There's also `imap-coding-system-for-read' and
`imap-coding-system-for-write'. Their values are bound to the related
`coding-system-for-read' and `coding-system-for-write' before starting
up the subprocess to talk to the IMAP server. (See, for example,
`imap-ssl-open'.)

They're both bound to 'binary by default, which is what I would have
proposed setting them to for our experiment.
