Aloha everyone,

At the risk of being a little repetitious, everything here can be set
up by using gnu-alias and assigning identities and rules to the
variables
gnus-alias-identity-alist (and gnus-alias-identity-rules if you want
to determine identity based on From, To, etc.).

Then call gnus-alias-select-identity, on my system bound to C-c C-p,
at any time while composing an email.

There are a few edge cases, especially when using both -alist and
-rules, but by and large it's smooth and straightforward (at least
straightforward by gnus' standard).
