Thanks. As a workaround, you could always do some surgery to
mailcap-mime-data in your init file, and remove doc-view-mode.
(It would be nice to have a good interface to manipulate that variable,
including some control over which viewer is preferred, but generally it
just works well enough as is, so I don't know if it would be worth the
effort.)
