I think `gnus-simplify-subject-functions' doesn't do what you think
it does. The option is used for threading, i.e. to decide when two
subjects are considered the same.
`gnus-list-identifiers' is probably what you want.

Did you try `i gnus-simplify-subject-functions' in the Gnus manual?
