Currently when trying to view a PDF on Mac OS X it tries to launch 'gv',
is there a way to set this to use 'Preview.app' instead? I looked
around online but everyone seems to reference a mailcap file which I
don't think Mac OS X uses.

You can just put the
application/pdf; Preview.app %s
in ~/.mailcap.
