If I put, say, ÆØÅ in the subject header when sending mail, it gets all
mangled and mimed. Is this a good thing? Can I turn it off?

Yes. You often don't know what "native" charset the mail recipient
uses, so it's Good to tag non-ascii characters with the charsets
that's being used.

Yes, by fiddling with `gnus-group-posting-charset-alist'.
