First of all: Perhaps it would make sense to tweak header folding a
bit. Instead of this:
Subject: mismatch between summary lines in the summary buffer and articles
they correspond to
perhaps it should be like this:
Subject: mismatch between summary lines in the summary buffer and articles
they correspond to
That is, line the continuation line(s) up.
Secondly, would it make sense to default this to `head' instead of
nil? Isn't it reasonable to think that users want the headers to be
all purdy and stuff?

I'm not sure. Too much header treatment might be confusing. Some
years ago I thought that whitespace would be allow in the Newsgroups
header because Gnus displays
Newsgroups: de.comp.text.tex,de.comp.editoren
as
Newsgroups: de.comp.text.tex, de.comp.editoren
BTW, I had problems to figure out that `gnus-treat-fold-newsgroups' is
responsible for this.

Talking about folding, I receive mails in which the "From:" header looks like:
From: =?UTF-8?B?S3J6eXN6dG9mIE3FgnluYXJza2k=?=

which is displayed as:
From: Krzysztof Młynarski
<krzysztof@fqdn>
I'm not sure why "Thunderbird 1.5 (Windows/20051201)" puts the address in
another line, but I'd be happy if gnus could fix that and display simply:
From: Krzysztof Młynarski <krzysztof@fqdn>

It's displayed on one line when I try it. Have you set
`gnus-treat-unfold-headers' to nil?
