I found that when I bounce a mail whose 'Subject' and 'From' are not
charset encoded the headers are encoded with iso-8859-1.
Is there a way to specify one other than iso-8859-1?

Hm... I would have thought that the normal header encoding rules
would apply, but perhaps not.
