A suggested interface: make the MML tag read-only (and perhaps give it some other text property so that we can write tag-like things in messages without confusing Message - don't know if we can get this saved in drafts, though) and give it a local keymap so that, say, RET gives a Customize buffer to edit the attributes. Not everyone thinks Customize is the greatest, but it does have the advantage of making the user-interface consistent across packages.
