The attached `patch' prevents the folding of the From-line (simply
skip rfc2047-fold-region in lisp/rfc2047.el after
  `;; No encoding necessary, but folding is nice').

Maybe folding isn't so nice after all. :-/ At least the From-line
shouldn't be folded, AFAICS.
