See (info "(emacs-mime)Display Customization").
My settings show the un-rendered HTML (unless I press the button, then
use emacs-w3m) and prefer text/plain if available:
(setq
mm-discouraged-alternatives
'("text/html" "text/richtext" "text/enriched" "multipart/related")
mm-automatic-display (remove "text/html" mm-automatic-display)
mm-text-html-renderer 'w3m)
