In Gnus, you can use `v gpdf %s RET' on the button to launch gpdf.

I'm not aware of a more simple solution or workaround in Gnus. But if
someone wants to implement overriding of the Content-Type, it would be
nice to have it in the MIME library (mm*.el) so that MH-E and Gnus
could use it.
