If `foobar' has a text property and I add something in the middle to
get `fooXXXbar', then surely XXX also has this text property, no?

I just tested this by adding stuff to the Subject header and saying
M-x list-text-properties-at RET -- the `field' property was there,
even in the new stuff.

No, gnus-point-at-bol might not be such a good choice, either, since
it is defined in gnus-util.el, and message*.el is supposed to be
independent from gnus*.el.

Linux provides a nice `poweroff' command, but where is `poweron'?
