Now that I have switched to IMAP, the imap server seems to always
leave some sort of pseudo message at the start of my INBOX, which
means that emacs thinks I always have new mail. I would like to see
"Mail" appear in the mode line only when I _really_ have new mail.
Does anyone know how to do this?

The mode line thing does not have anything to do with Gnus. It's done
by the display-time function, which just looks in
/var/spool/mail/jrl.
It should be possible to write your own function for display-time
which uses IMAP to find out if you have new mails. Dunno if anybody
has done that, though.
