Hoping some of hte RFC heavies will know about this:
Two lists I've subscribed recently have very different looking "From "
and "Return-Path: " headers. They look ... well wrong ..sort of.
Is this a trend or is it even proper?

It's peculiar to OneList.com, but it's perfectly proper.
The extensive information encoded lets them handle bounce-o-grams
better, I understand.

These are VERP, or Variable Envelope Response Paths, invented by Dan
Bernstein, author of qmail. They allow mailing list software to
determine which message and which subscriber a bounce corresponds to,
allowing the automation of bounce handling (a godsend!).
