I maintain a link for loading Gnus, too.  However, I've never had a
problem with getting either of (X)Emacs to respect
Info-default-directory-list.  From an init file:

(setq Info-default-directory-list
      `(,(expand-file-name "~/xemacs/site-lisp/ding/texi/")
	,(expand-file-name "~/xemacs/site-lisp/info/")
	,@Info-default-directory-list
	"/usr/info/"
	"/usr/local/info/"))

There're three symlinks on the way to .../texi. :-)
