I have the latter situation i.e. I have specified (nnimap "" (nnimap-address "bar")) (and the .authinfo entry is indeed 'machine bar'). I got nowhere by first trying to add 'foo' to the server definition; any tips on how to proceed? (I guess 'foo' should be a virtual server name? I wasn't able to access any of the imap mailboxes when I added the virtual server name to my imap server command).
