When receiving an e-mail from a certain source, there is every time
another e-mail address. This is to make it easier for the other party to
see from which e-mail the response originates. But every time I am asked
if I want to include the e-mail address, which I find a little annoying.
Is there a way to circumvent this?

bbdb-canonicalize-net-hook
is for this purpose.
