I'd like set my From: header in one way for Gnus and another for VM. How
do I achieve this? Both tell me to set user-mail-address.

With Gnus you can use Posting Styles which overwrite user-mail-address
on a per group basis.

|    So what if you want a different `Organization' and signature based
| on what groups you post to?  And you post both from your home machine
| and your work machine, and you want different `From' lines, and so on?

Wonderful. Looks like it solved this one and many other problems I was
thinking about, though with less urgency.
