You can use variable gnus-posting-styles to have different fields on
different groups. Example:
(setq gnus-posting-styles
'(("fido.*"
(address "email@email.com")
(signature "Best regards,\nIt's me"))
(".*"
(address "email2@email.com")
(signature "Another signature"))))
