Where does the gnus manual explain what the U means?

U means "unsubscribed". `C-h v gnus-group-line-format' tells you that
there are 

      'U' : unsubscribed
      'K' : killed
      'Z' : Zombie-Group
      ' ' : subscribed

Read (info "(gnus)2.1.1 Group Line Specification").
