After a long period of using other email clients (don't ask why) I've
gone to back to using gnus. I'm discovering there are somethings I've
forgotten - namely, how does one configure gnus to send mail via
IMAP, rather than using the local send mail?

You cannot send mail via IMAP. I think you want to send it with some
smtp server.
That's what I use for that purpose:

| (setq send-mail-function 'smtpmail-send-it
| message-send-mail-function 'smtpmail-send-it
| smtpmail-smtp-server "mail.messagingengine.com")
