Sorry for adding to the confusion.
I first used setq to create mailsources and then used addlist to add my second
account entry.

See below

(setq mail-sources 
      '((pop :server "mail"
             :user "one"
             :password "onesdeepdarksecret")))

(add-to-list 'mail-sources '(pop :server "mail"
            :user "two"
            :password "sosecretthatiwouldhavetodosomethinghorridtoyou"))
