can you try this (untested),

\chardef\stateA\zerocount
\chardef\stateB\plusone
\chardef\stateC\plustwo

\let\currentstate\stateA

\def\statecolor{\ifcase\currentstate red\or green\or blue\fi}

\color[\statecolor]{Currentstate}

\let\currentstate\stateB
