Why so complicated, * did also work with Latin Modern and the other fonts. I prefer \definesymbol [asterisk] [\char"2A\relax] and \symbol{asterisk}, you're way is also possible but \startencoding[default] \definecharacter Asterisk \char"2A \stopencoding is also possible.
