I'm not sure about Polish setting, I'd try
\mainlanguage[pl]
to set the generated words (Chapter, ...) into Polish, and
\setupbodyfont[my-polish-font-in-the-same-encoding-as-source-is]
(for Czech, cmr, and there are no problems).
