You can have two windows up, one for Gvim and one for Acroread. Periodically in your process you can use this Gvim command: :!texexec foo.tex (plus whatever parameters you need) =2E..and then close and reopen the foo.pdf image in Acrobat Reader. This is how I do it on a Linux system anyhow. I opened acrobat reader as a separate process with the command=20 acroread foo.tex & =2E..which means that it won't shut down when I close the previous version of foo.pdf.
