(Since you're from .fr, I'll make an assumption about the editor you use...) iTeXMac in recent (unstable) releases has fixed some apparent bugs in encoding of documents. I believe it also allows you to check and change the encoding. If your files are in Mac OS Roman, then you should be using \enableregime[mac], as you say.
