There was a typo in your original typeface definition:

should be:
\starttypescript [Karat]
\definetypeface [Karat] [ss] [sans] [karat] [default] [encoding=texnansi]

Yes, it's a reasonable default.
\definebodyfont[ss,Karat] should work now, though!
