I don't know what \defineindenting is supposed to do. I can hardly
believe that the dots in the output are intended. What about this:

\definedelimitedtext
  [indenting]
  [leftmargin=4cm, rightmargin=]

\starttext
  \startindenting
    \input knuth
  \stopindenting
\stoptext
