All,

Suppose I want a macro

\def\B{definition here}

that will select a particular character from a particular font set. In
particular, I want the character B, but from the LucidaCalligraphy font.

How do I do this?

See symb-eur.tex for an example of defining symbols which even adapt
themselves to the style. In your case, since you use [lbr], you may say: 

\definesymbol[Davids B][{\cg B}]
