I mean something like a \definespeech, so that I can do:
\definespeech[speech][left=\doubleleftguillemot,
middle=left,right=\doublerightguillemot]
% ^^^^ note the fast way to make middle equal to left!
\definespeech[thought][left=\upperleftduoblesixquote,
middle=left, right=\upperrightdoubleninequote]
and so on and so forth.
