How can I set the ConTeXt heads to be numbered with leteres, e.g.
A. Chapter one
or
b. section two
?

I'm not aware of a setup that does this, but you can try your own
formatting:
\setuphead
[chapter]
[command=\MyChapter]
\def\MyChapter#1#2%
{\ifcase#1{zero{\or{one}\or{two}...\fi #2}
or something like that.
There is also a numbercommand setting that perhaps does only the number
formatting, but I've never it.

Ah, something berend does not know. Then the manual must be real bad.
\setupsection
[sectionlevel-2]
[appendixconversion=greek]
For chinese we have for instance:
\setupsection [sectionlevel-1] [headconversion=chinese]
\setupsection [sectionlevel-2] [appendixconversion=]
if one uses the section blocks (frontmatter, etc) division, appendices are
getting A B C automatically.
