The reference book tells me that I have to set \language[de] to
set hyphenation patterns. But what do I have to do if I want to
let \placefigure give an "Abbildung" instead of a "Figure"? After
browsind the sources I thought \setupcurrentlanguage[\s!de] might be
a good guess, but it (the argument) was unknown to pdfetex.

Try \mainlanguage[de].
If you need/want to use the pre-reform (Rechtschreibreform 1996)
spelling, use "deo" instead of "de" for \language.
