Hi Ciro,
AFAIK chancery has no typeface associated. So you need to do that yourself
\usetypescript[chancery][texnansi]
\definetypeface
[myfont][cg][calligraphy][chancery][default][encoding=texnansi]
\setupbodyfont[myfont,cg,12pt]
