I think (at least) LMTX has an issue with the font:
\definefontfamily [TextEmoji] [rm] [OpenSansEmoji]
\setupbodyfont [TextEmoji]
\starttext
\input knuth
\stoptext
I’m afraid I cannot test this with MkIV.
