That's easy, swap these two lines:

\definetypeface [minionmyriad] [rm] [serif] [minion-pro] 
[opticals,environment]
\definetypeface [minionmyriad] [ss] [sans] [myriad-pro]
[normal,environment]

(the last defined typeface becomes the default in \setupbodyfont)
