You can use the fallback mechanism:

\definefallbackfamily [mixedfont] [rm] [TeX Gyre Pagella] 
[tf=style:italic,range=0x61-0x7A,force=yes]
\definefontfamily     [mixedfont] [rm] [TeX Gyre Pagella]

\setupbodyfont[mixedfont]

\starttext
Some Text with Capital XYabcXY
\stoptext
