Predefined are “set 0” till “set 3”.

\starttext
\dorecurse {8}{\convertnumber{set 0}{#1}\quad}\par
\dorecurse {9}{\convertnumber{set 1}{#1}\quad}\par
\dorecurse{12}{\convertnumber{set 2}{#1}\quad}\par
\dorecurse{15}{\convertnumber{set 3}{#1}\quad}\par
\stoptext

You can write your own symbol lists with (I use math mode because the spacing between the asterisks is better):

\defineconversion[starred][\m{*},\m{**},\m{***}]

You can look if you find something in the manuals or the wiki.
