You can define your own symbol, as in the following:

\starttext
  \definesymbol[mysymbol][{$\red\blacklozenge$}]
  \definesymbol[redtriangle][{$\red\blacktriangleright$}]
  
  \startitemize[mysymbol]
  \item foo
  \item bar
  \item baz
  \stopitemize

  \startitemize[redtriangle]
  \item foo
  \item bar
  \item baz
  \stopitemize
  
\stoptext
