Evidently I'm missing something.

This seems to work, but I have a strange spacing between the first two
columns and the last three ones.
Could anyone explain to me why?

because you didn't give a template (which means that you get the default
[|l|p|]
\starttabulate[|l|l|l|l|l|]
btw \unknown is a shortcut for $\ldots$
