You'll these few lines:
\usetypescript[palatino]
\definetypeface[palatino][rm][serif][palatino][default]
\definetypeface[palatino][mm][math][palatino][default]
\setupbodyfont[palatino,11pt]
then modify as suggested by Hans. Works for me with the latest beta of
minimals.
