You need to modify /usr/local/texlive/2010/texmfcnf.lua:

return {
       content = {
               TEXMFCACHE = '~/Library/texlive/2010/texmf-var',
               TEXMFHOME  = '~/Library/texmf',
       },
       TEXMFCACHE = '~/Library/texlive/2010/texmf-var',
}

There is no way to update TeX Live to fix this file as this is a local
addition of MacTeX. Dick promised to fix the online version of MacTeX,
but DVDs have probably been printed already.
