I have tried the three of your propositions:

First : keeping sans:

1. using \ss works
2. \definebodyfont[ss,Karat] does not.

Second : changing from sans

3. Changed all refs to "sans" into "serif" in my typescript file karat.tex. 
This works too.

Now, my font is a sans. What is the best way to configure it ?

Is Context configured to use serif by default when u type any text ?
