\definefontfamily[mainface][mm][TeX Gyre Termes Math]

\setupbodyfont[mainface,10pt]

\setuppagenumbering[state=stop]

The definefallbackfamily commands do not set what kind of greek
letters we get, but only from what font the corresponding range comes
from. This is at elast how I understand it.
