\defineconversionset [appendix:enumconversionset] [] [n]
\setupenumeration[numberconversionset=enumconversionset]

did it for me.

Just out of curiosity, is there some way to do this to automatically
change Roman capitals to numbers in appendix (for enumerations,
captions, ...)?
