this might do the work (LMTX only):

=C2=A0 [\pagenumber{} of \the\numexpr{\totalnumberofpages - 1}]

For MkIV, you would need:

=C2=A0 [\pagenumber{} of \the\numexpr\totalnumberofpages - 1\relax]
