It’s the fault of the OpenType version of the LM Math fonts which
are used when you use the simplefonts module:
\definetypeface[mainface][rm][serif][modern]
\definetypeface[mainface][mm][math] [modern]
\setupbodyfont[mainface]
\starttext
\startformula
\binom{1}{2}
\stopformula
\stoptext
