You need also \definefontsynonym but it's easier to create a new 
typeface (fontfamily) and load it with \switchtobodyfont.

\definefontfallback
   [AnotherFontFallback]
   [file:texgyreherosregular*default]
   [lowercasenormal]
   [force=yes]

\definefontsynonym
   [AnotherFontMain]
   [file:texgyrepagellaregular]
   [fallbacks=AnotherFontFallback]

\definefont [AnotherFont] [AnotherFontMain*default]
