Problem 1, is that as written it fails to render as a table at all. If I put a blank line before the [Caption] then it renders the table, though without a real caption. Problem 2, is that the column widths aren't calculated, and they extend way over the edge of the page. This even happens with --columns=500 option to pandoc. What can I change to make the table work with these long text items, and caption? Most likely that is because your source documents are wider than pandoc
expects (default is 72 characters).  Try using --columns.
